Thai chicken meatballs in coconut curry sauce

A perfect dish to enjoy while watching the snowstorm whining outside. I managed to take my daily walk though, without suffering too much from the blizzard. It was nice to come home to these gorgeous meatballs that I made a few days ago. And I was clever enough to prepare a big bunch and put them in the freezer in meal-size boxes.
By using red curry paste, garlic, ginger, fish sauce and kaffir lime leaves you get a wonderfully aromatic and hot sauce to cover the meatballs with. If you are not familiar with kaffir lime leaves I strongly recommend you to buy some. Supermarkets have dried ones, ethnic shops also sell fresh/frozen ones. I prefer the latter, you can keep them in the freezer and take out the amount needed. For the meatballs you can use either turkey or chicken. Baking the meatballs in the oven gives you softer, more pillowy balls with a tender crust. Furthermore there's no extra oil needed for frying the meatballs.

I doubled the recipe, both for the meatballs and the sauce and got about 50 meatballs.
Ingredients for 4-5 servings:
Thai meatballs:
500 g ground chicken or turkey
1 egg
2,4 dl panko breadcrumbs (I used only 1,5 dl)
1,2 dl minced green onion
3 cloves pressed garlic
1,5 tablespoons grated ginger or ginger paste
1 tablespoon soy sauce or fish sauce
1 tablespoon red curry paste (I used 2 tablespoons, because we like it hot)
1 teaspoon (kosher) salt
1 teaspoon freshly ground black pepper
1. Preheat the oven to 200 degrees C/400 degrees F and spray a baking sheet with cooking spray or oil. Set aside.
2. In a large bowl, combine the ground meat with the egg, panko breadcrumbs, green onion, garlic, fish sauce, ginger, red curry paste and salt and pepper. Lightly fold the ingredients together. Gently knead the mix with damp hands until incorporated. Cover and refrigerate the mixture for at least 15 minutes for the breadcrumbs to soften, up to overnight.
3. Form small meatballs and place on a cutting board. Dampen your hands and lightly shape and roll the meatballs between your palms and place evenly spaced on the baking sheet. Bake until no longer pink inside, about 20 minutes, then broil on high for another 5-10 minutes for a deliciously crispy crust. Remove from the oven and add to the coconut curry sauce.
Authentic Sichuan bang bang chicken

I borrowed this easy recipe from the blog thewoksoflife.com, Bang Bang Chicken: The Authentic Sichuan Version | The Woks of Life and I advise you to take a look at their informative photos of the different stages in preparing this Bang bang chicken. First you poach the chicken breasts/thighs/a whole chicken. Then you hammer the chicken, i.e. bang it with a rolling pin to flatten the meat and shred it. This method helps the chicken better absorb the sauce. The next step is to julienne the cucumber and prepare the spicy and tangy sauce. Finally you assemble everything just before you're ready to dig in! A healthy and wonderfully fresh chicken dish that I think everybody who is into Asian food would appreciate!
The recipe below is for 4 servings. I doubled the recipe, but don't make more than you're going to eat because the cucumber gets very soggy if it is covered in sauce overnight.

Tällä kertaa marinoin kanafilettä noin 6 tuntia, ravistelin ylimääräisen marinadin pois ja laitoin
Sää oli kerta kaikkiaan upea, aurinkoinen ja lämmin vielä yhdeksän aikoihin illalla. Illallisen kruunasi oikein miellyttävä espanjalainen roséviini. Siitä lisää reseptin jälkeen.
Ainekset neljälle:
600-700 g kanafilettä
Marinadi:
1/2-1 dl gochujangia, omien makunystyröiden mukaan
1/2 dl soijaa
1 rkl seesamiöljyä
2 salaattisipulia, hienonnettuna
3-4 valkosinpulinkynttä, hienonnettuna
noin 1 rkl hienoksi raastettua inkivääriä
1 tl sokeria
2. Sekoita kaikki marinadin ainekset ja lisää suikaleet. Käytä muovipussia, niin pääset helpommalla. Marinoi ainakin pari tuntia, mutta mieluummin niin kauan kuin mahdollista.
3. Nosta fileet marinadista, ravistele suikaleita niin että ylimääräinen marinadi irtoaa. Älä kuivaa niitä, hieman marinadia saa jäädä pintaan. Grillaa tai paista uunissa korkealla lämmöllä. Grilli hoitaa tämän alta aikayksikön. Ole varovainen ettet polta niitä.
4. Ripottele päälle salaattisipulia ja seesaminsiemeniä.
Espanjalainen kauniinvärinen roseeluomuviini. Rypäleet: syrah ja tempranillo. 6 g sokeria/litra. Tuoksu on raikas ja maku on täynnä sitrusta, vadelmaa, viinimarjaa, mansikkaa ja yrttejä. Korkea hapokkuus, joka miellyttävästi kutittelee kieltä. Jälkimaku on hieman yrttinen. Ruokasuositus: grillattu kana/broileri, ruokaisat salaatit ja pastaruoat. Viini sopii nautittavaksi sellaisenaankin. Täydellinen ja edullinen kesäviini.
