Thai chicken meatballs in coconut curry sauce

sunnuntai 30. tammikuuta 2022

A perfect dish to enjoy while watching the snowstorm whining outside. I managed to take my daily walk though, without suffering too much from the blizzard. It was nice to come home to these gorgeous meatballs that I made a few days ago. And I was clever enough to prepare a big bunch and put them in the freezer in meal-size boxes.

By using red curry paste, garlic, ginger, fish sauce and kaffir lime leaves you get a wonderfully aromatic and hot sauce to cover the meatballs with. If you are not familiar with kaffir lime leaves I strongly recommend you to buy some. Supermarkets have dried ones, ethnic shops also sell fresh/frozen ones. I prefer the latter, you can keep them in the freezer and take out the amount needed. For the meatballs you can use either turkey or chicken. Baking the meatballs in the oven gives you softer, more pillowy balls with a tender crust. Furthermore there's no extra oil needed for frying the meatballs.

The recipe comes from the blog foodiecrush.com

I doubled the recipe, both for the meatballs and the sauce and got about 50 meatballs.

Ingredients for 4-5 servings:

Thai meatballs:

500 g ground chicken or turkey

1 egg

2,4 dl panko breadcrumbs (I used only 1,5 dl)

1,2 dl minced green onion

3 cloves pressed garlic

1,5 tablespoons grated ginger or ginger paste

1 tablespoon soy sauce or fish sauce

1 tablespoon red curry paste (I used 2 tablespoons, because we like it hot)

1 teaspoon (kosher) salt

1 teaspoon freshly ground black pepper

1. Preheat the oven to 200 degrees C/400 degrees F and spray a baking sheet with cooking spray or oil. Set aside.

2. In a large bowl, combine the ground meat with the egg, panko breadcrumbs, green onion, garlic, fish sauce, ginger, red curry paste and salt and pepper. Lightly fold the ingredients together. Gently knead the mix with damp hands until incorporated. Cover and refrigerate the mixture for at least 15 minutes for the breadcrumbs to soften, up to overnight.

3. Form small meatballs and place on a cutting board. Dampen your hands and lightly shape and roll the meatballs between your palms and place evenly spaced on the baking sheet. Bake until no longer pink inside, about 20 minutes, then broil on high for another 5-10 minutes for a deliciously crispy crust. Remove from the oven and add to the coconut curry sauce.

Curry coconut sauce:

1 tablespoon canola oil
1/2 red bell pepper sliced (I used a whole)
1/2 yellow onion sliced (I used a whole)
1 tablespoon ginger
1 tablespoon red curry paste
1 can unsweetened coconut milk
1 tablespoon fish sauce or soy sauce (I took one of each)
2 tablespoons brown sugar (this amount is way too big, I used 1/2 tablespoon only)
3-4 kaffir lime leaves (these were not listed in the original recipe, but I tend to use them in almost every Asian sauce I make, because they give so much flavour to the curry)
chopped cilantro, for garnish

1. While the meatballs are baking, prepare the coconut curry sauce. In a large skillet, heat the oil over medium high heat. Add the onions and red bell pepper and cook for 3-4 minutes, stirring often so the vegetables don't burn but become soft and fragrant.

2. Add the coconut milk and the brown sugar and fish sauce or soy sauce and stir to combine. Cook for 5 minutes, stirring occasionally. Taste for seasoning and if it needs more salt, add a dash or two more fish sauce or soy sauce. Garnish with chopped cilantro leaves and serve over rice or noodles.

Thai shrimp appetizer spoons

sunnuntai 27. joulukuuta 2020

These super tasty shrimp amuse bouches are healthy, easy to make and stunning ... if you remember to garnish them with coriander leaves, which I obviously forgot in the heat of the moment. We enjoyed them with a glass of champagne before the Christmas Eve tasting menu. I stole this mouth-watering recipe from the blog www.sprinklesandsprouts.com

The fresh shrimp salad is topped with crispy onions and roasted peanuts to give it some crunch. The dressing is made with lime juice, fish sauce and sugar. I also added a bit of yuzu soy sauce.

Ingredients for 26 spoons:

1/2 of a big cucumber

2 green onions

1 long red chili

2 tbsp lime juice

2 tsp fish sauce (I probably used a little bit more)

2 tsp sugar

26 big shrimp or 52 regular size shrimp (ready cooked)

2 tbsp roasted peanuts (I used store-bought salted & roasted)

2 tbsp fried onions (can be bought in Asian stores)

cilantro leaves to serve

Instructions:

1. Cut the cucumber into batons and remove the seeds. I peeled the cucumber first. Then chop the batons into small dice and place in a non-metallic bowl.

2. Thinly slice the green onions and add them to the bowl.

3. Finely chop the deseeded red chili, then add it to the bowl with the cucumber and onion.

3. Mix the lime juice, fish sauce and sugar together and stir until the sugar has dissolved.

4. Taste your dressing and adjust to your preference. At this point I added some yuzu.

6. Pour the dressing over the salad and stir to combine.

7. Place a heaped teaspoon of the cucumber mixture into each spoon and top with a shrimp.

8. Sprinkle over some roasted peanut, crispy onion and garnish with a cilantro leaf.

I made my crispy fried onions by following this outstanding recipe:

Thaimaalainen kurkkusalaatti & kiinalainen munakoiso

torstai 30. tammikuuta 2020

40 ml valkoviinietikkaa
2 tl hienoa sokeria
20-40 ml chilikastiketta (käytin sweet chili -kastiketta)
1/2 punasipuli, hienonnettu
1 1/4 dl (15 g) tuoreita korianterin lehtiä
2 1/2 dl (160 g) suolattomia paahdettuja maapähkinöitä, hienonnettuina (käytän yleensä suolattuja)
40 ml friteerattua valkosipulia (jätin  pois, koska onnistuin polttamaan valkosipulin … löytyy valmiina aasialaisista kaupoista)
1/2 tl hienonnettua chiliä
40 ml kalakastiketta

1. Kuori kurkut ja halkaise ne pituussuunnassa. Poista siemenet teelusikalla ja leikkaa kurkut ohuiksi siivuiksi.

2. Yhdistä viinietikka ja sokeri pienessä kulhossa ja sekoita kunnes sokeri on liuennut. Kaada isompaan kulhoon ja lisää kurkku, chilikastike, sipuli ja korianteri. Anna marinoitua 45 minuuttia.

3. Lisää pähkinät, valkosipuli, chili ja kalakastike. Sekoita varovasti ja vie heti tarjolle.

Makea munakoiso valkosipulilla ( Stora asiatiska kokboken)

Paistettu munakoiso yhdistettynä valkosipuliin on uskomattoman herkullinen kombo.

3 keskikokoista munakoisoa (otin kaksi isoa)

Kiehauta sekoittaen. Lisää paistetut munakoisot ja alenna lämpöä. Anna kastikkeen imeytyä kolmisen minuuttia.

Chilifaneille kannattaa laittaa tarjolle ekstraa chiliä vaikka kastikkeen muodossa.

Thai larb

perjantai 27. joulukuuta 2019

Easy to make, full of brilliant Thai flavours, few carbs, superdelicious. When you taste this lovely larb for the first time there is a chance that you'll be hooked forever! This spicy little dish has made it to the very top of my favourites and I hope you'll enjoy it as much as my family does.
You can use either pork or chicken meat but don't leave out the toasted rice because it plays a crucial part in the larb's crunchy texture. The toasted rice project is not difficult at all, as you'll notice further down.
I prefer using minced chicken and I also adjust the measures of spices to my liking. Some like it hot, you know. In Thailand they tend to serve larb with a salad or with sticky rice, but I normally serve it as finger food on lettuce leaves that are easy to bundle up and put in your mouth. This way the larb transforms into a tasty tapas dish.
Go ahead and make some healthy superfood after all the
Christmas indulgence!

Ingredients:
about 5 tablespoons of uncooked Thai (sticky) rice (directions on how to toast it and make it into powder further down)

300 grams minced chicken (or pork/beef)
1 tablespoon of chili flakes/dried chili or fresh minced chili
a pinch of sugar
1/2 - 1 tablespoon of fish sauce
1 - 2 limes
3 - 4 shallots
cilantro leaves
mint leaves/Thai sweet basil leaves
3 - 5 spring onions

Toasted rice:
Heat a frying pan on low heat and toss in the uncooked Thai rice. Don't use any oil. Stir continuously until it turns golden yellow. It takes about 10-15 minutes before it's done. When it has cooled off, put it into a stone mortar and pestle. Pound it until it turns into a coarse powder. You can also use a blender or food processor.

Larb:
1. Fry the meat in a saucepan until it's fully cooked. If you use pork meat a lot of fat will come out … you can either leave it or throw it away … depending on how healthy you feel. Take the pan off the heat.

2. Add 1 1/2 tablespoon of the toasted rice powder (store the rest in a glass container and use another time) and the chili to the fried meat. Also add sugar, fish sauce and the juice from 1 lime. You can cut up the other lime and serve it on the side. Stir everything quickly together.

3. Peel and slice the shallots, finely mince 3 - 5 spring onions and a few cilantro and mint leaves. Mix them well with the larb. Check the taste and add more fish sauce, lime juice or chili if you feel like it. Spoon the larb onto lettuce leaves and garnish with more mint, Thai sweet basil and cilantro leaves.

Gai pad prik - tulinen thaimaalainen kanawok

tiistai 12. marraskuuta 2019

Takuuvarma resepti kaikille aasialaisen ruoan ystäville. Nopea ja helppo wokki täynnä makua. Hieman jasmiiniriisiä kylkeen ja pääset nauttimaan tästä ihanuudesta. Resepti tulee Jennie Walldénin kirjasta "Mycket smak på nolltid". Pieni kirja, joka on täynnä toinen toistaan herkullisempia reseptejä. Suosittelen lämpimästi ruotsin kielen taitajille!

4 annosta:
600 g kanan filettä (mieluummin koipea)
250 g (pitkiä) vihreitä papuja
2 valkosipulinkynttä
3-4 rkl punaista thai currytahnaa (oman maun mukaan)
neutraalia rypsiöljyä paistamiseen
1 rkl kalakastiketta
1 rkl fariinisokeria
1 nippu thaibasilikaa
(1 lime lohkoina)

Ainekset:
1 litra sekasieniä (käytin kantarelleja, herkkutatteja ja mustia torvisieniä)
1 tl vihannesfondia + 2 rkl vettä
2 rkl kalakastiketta
3 rkl limemehua
1 tl sokeria
1 rkl srirachakastiketta (tai enemmän riippuen omista makumieltymyksistä)
1 purjosipuli
2 punasipulia
1 dl tuoretta thaibasilikaa, hienonnettua (tavallinen basilikakin käy)
1 dl tuoretta korianteria, hienonnettua
1 rkl paahdettua riisipulveria (katso alhaalla)

1. Puhdista sienet ja pilko ne karkeasti. Laita sienet, fondi ja vesi paistinpannuun ja hauduta matalalla lämmöllä noin 10 minuuttia. Anna nesteen imeytyä kokonaan sieniin.

2. Laita sienet kulhoon ja kaada päälle kalakastiketta, limemehua ja srirachakastiketta.

3. Lisää hienonnettua punasipulia, purjosipulia, thaibasilikaa ja korianteria. Sekoita. Sirottele päälle riisipulveria ja sekoita kunnolla. Anna levätä tunnin verran ennen kuin maustat lisää.

4. Tarjoile sieniherkku salaatinlehdistä. Sirottele vielä hieman riisipulveria päälle ennen tarjoilua.
