My son brought me a much appreciated souvenir from Bali, namely a vegan cookbook. It contains 150 recipes from 60 restaurants with beautiful photos and clear directions for the recipes. This chocolate avocado pudding recipe is the only one I've made so far, and it's also one of the easiest in the book. You only need 5 ingredients and a blender to make this quick and creamy dessert. A winner in all aspects.
Ingredients for 4 servings:
300 g avocado
50 g dates
40 g cocoa powder
40 ml espresso
100 ml water
45 ml maple syrup (or less)
Blend all ingredients together. Garnish with slices of fruit such as mango, pineapple, strawberries, raspberries, black grapes etc.
