Thai chicken meatballs in coconut curry sauce
sunnuntai 30. tammikuuta 2022
A perfect dish to enjoy while watching the snowstorm whining outside. I managed to take my daily walk though, without suffering too much from the blizzard. It was nice to come home to these gorgeous meatballs that I made a few days ago. And I was clever enough to prepare a big bunch and put them in the freezer in meal-size boxes.
By using red curry paste, garlic, ginger, fish sauce and kaffir lime leaves you get a wonderfully aromatic and hot sauce to cover the meatballs with. If you are not familiar with kaffir lime leaves I strongly recommend you to buy some. Supermarkets have dried ones, ethnic shops also sell fresh/frozen ones. I prefer the latter, you can keep them in the freezer and take out the amount needed. For the meatballs you can use either turkey or chicken. Baking the meatballs in the oven gives you softer, more pillowy balls with a tender crust. Furthermore there's no extra oil needed for frying the meatballs.
The recipe comes from the blog foodiecrush.com
I doubled the recipe, both for the meatballs and the sauce and got about 50 meatballs.
Ingredients for 4-5 servings:
Thai meatballs:
500 g ground chicken or turkey
1 egg
2,4 dl panko breadcrumbs (I used only 1,5 dl)
1,2 dl minced green onion
3 cloves pressed garlic
1,5 tablespoons grated ginger or ginger paste
1 tablespoon soy sauce or fish sauce
1 tablespoon red curry paste (I used 2 tablespoons, because we like it hot)
1 teaspoon (kosher) salt
1 teaspoon freshly ground black pepper
1. Preheat the oven to 200 degrees C/400 degrees F and spray a baking sheet with cooking spray or oil. Set aside.
2. In a large bowl, combine the ground meat with the egg, panko breadcrumbs, green onion, garlic, fish sauce, ginger, red curry paste and salt and pepper. Lightly fold the ingredients together. Gently knead the mix with damp hands until incorporated. Cover and refrigerate the mixture for at least 15 minutes for the breadcrumbs to soften, up to overnight.
3. Form small meatballs and place on a cutting board. Dampen your hands and lightly shape and roll the meatballs between your palms and place evenly spaced on the baking sheet. Bake until no longer pink inside, about 20 minutes, then broil on high for another 5-10 minutes for a deliciously crispy crust. Remove from the oven and add to the coconut curry sauce.

Riisinuudelisalaatti lihalla ja maagisella kastikkeella
lauantai 25. syyskuuta 2021
Kastike on ruoan tähti. Sitä tehdessä kannattaa luottaa makunystyröihinsä, jotta lopputuloksesta tulee mieleinen. Salaatin voi esivalmistaa odottamaan lihan grillaamista/paistamista.
Ainekset:
500 g marmoroitua filettä (otin flat iron steakin pakastimesta)
250 g leveitä riisinuudeleita
1 kurkku
1 porkkana (otin 2)
10 cm retikkaa
1 dl sokeriherneitä (käytin edamamepapuja)
20 g babypinaattia
100 g maapähkinöitä
3 kevätsipulia
1 ruukku korianteria
1 ruukku minttua
voita ja ruokaöljyä paistamiseen
Kastike:
2 limettiä
3 rkl kalakastiketta (otin enemmän)
2,5 rkl fariinisokeria (otin enemmän)
1 valkosipulinkynsi, raastettu (otin 2)
2 rkl inkivääriä, raastettu
1 punainen chili, hienonnettu (otin 2)
Lasinuudelisalaatti katkaravuilla + viinivinkki
tiistai 8. kesäkuuta 2021
Raikas ja rouskuva kesäinen salaatti, täynnä vihanneksia ja katkarapuja. Pisteenä i:n päälle jumalainen aasialainen kastike, limestä, kalakastikkeesta, fariinisokerista, inkivääristä, valkosipulista, srirachasta ja öljystä. Ohjeen nappasin Jennie Walldénin kirjasta "Wok, ris, nudlar".
Ainekset:
200 g lasinuudeleita
1 nippu retiisejä
3 kevätsipulia
1-2 punaista chiliä
10 cocktailtomaattia
1/2 kurkkua
100 g sokeriherneitä
1 porkkana (unohtui minulta)
1 ruukku korianteria (valitsin vahingossa lehtipersiljan kaupassa, joten sillä mentiin)
1 ruukku minttua
1 dl suolattuja maapähkinöitä (minulla oli pistaasipähkinöitä)
100 g pavunituja
300 g kuorittuja katkarapuja
Kastike:
1 rkl raastettua inkivääriä
3 raastettua valkosipulinkynttä
3 limettiä, kuori ja mehu
3 rkl ruokaöljyä
1 dl kalakastiketta
4 1/2 rkl fariinisokeria
2 rkl srirachakastiketta
Tee näin:
1. Raasta inkivääri, valkosipuli ja limenkuori ja sekoita kaikki kastikkeen ainekset. Laita sivuun.
2. Keitä nuudelit pakkauksen ohjeen mukaan. Huuhtele kylmällä vedellä kunnes nuudelit ovat jäähtyneet kauttaaltaan. Valuta siivilässä.
4. Siirrä kaikki vihannekset ja nuudelit isolle vadille. Kaada päälle kastike, lisää katkaravut, yrtit ja pähkinät.

Authentic Sichuan bang bang chicken
tiistai 13. huhtikuuta 2021
I borrowed this easy recipe from the blog thewoksoflife.com, Bang Bang Chicken: The Authentic Sichuan Version | The Woks of Life and I advise you to take a look at their informative photos of the different stages in preparing this Bang bang chicken. First you poach the chicken breasts/thighs/a whole chicken. Then you hammer the chicken, i.e. bang it with a rolling pin to flatten the meat and shred it. This method helps the chicken better absorb the sauce. The next step is to julienne the cucumber and prepare the spicy and tangy sauce. Finally you assemble everything just before you're ready to dig in! A healthy and wonderfully fresh chicken dish that I think everybody who is into Asian food would appreciate!
The recipe below is for 4 servings. I doubled the recipe, but don't make more than you're going to eat because the cucumber gets very soggy if it is covered in sauce overnight.
